WHITE TRUFFLE

Fruitbody: irregular, potato shaped, on average up to 6cm in diameter, although specimens over 20 cm were recorded. Peridium is white when cut, surface always mixture of grey, ochraceous and yellow, never totally smooth. Gleba is at first whitish later in yellow, grey and pink hues, strewn with white veins, smell strong complex.

Microscopy: spores ovoid, reticulately ornamented, 32-45x30-40 μm, yellowish to yellowish-brown. Asci are globose to ovoid, with 1-4 spores.

Habitat: sometimes deeply buried, close to various deciduous trees, along river banks, altitude up to 300m.

Edibility: very priced edible fungus, mostly used as a spice; commercially exploited.
